Aronia Sauce – for cheesecake, ice cream, etc.
Bring sugar and water to a full boil in a small saucepan and boil one minute.
Add Aronia berries and lemon juice and lower heat to medium – medium/low. Cook at a simmer to low rolling boil for 20-25 minutes. Remove from heat and puree until smooth.
Press with cheesecloth or fine sieve to remove any solids. Let cool.
